BLACK EYED BEANS IN COCONUT OIL (Ghanaian beans stew with plantain)

Beans stew in Ghana is popularly known as "red red" as it is usually prepared with palm oil.Added a little twist to the dish by using coconut oil.Coconut oil gives the dish a distinct flavor and
an amazing taste.

🍽Servings:4 persons


INGREDIENTS
•1 cup of black eyed beans 
•4 medium tomatoes
•1 medium smoked salmon or smoked fish of choice
•2 medium onion
•2 tablespoons tomato purée(optional)
• 10 Petit belle pepper (kpakposhito)
•2 cloves of garlic
•100ml coconut oil 
•Salt to taste 
•An inch of ginger
•Powdered shrimp/shrimp seasoning cube
•4 ripe plantains

COOKING PROCESS;
1. Soak beans in water overnight .
2. Boil  using 1liter  of water until beans is cooked through.Add more water if necessary until the beans are cooked,and the quantity of water has reduced.Strain water from beans and set aside.
3. Wash and chop vegetables (tomatoes,ginger,1onion,garlic )add pepper and blend
4.In a cooking pot,heat 60mls of coconut oil chop remaining onion ,fry in oil for about 2 minutes  add tomato Paste,stir continuously for 2mins.Add blended pepper ginger mix .cover,and cook on medium heat for about 15-20minutes .
5.Add  shrimp seasoning cube,add smoked salmon and stir.Allow to simmer on low heat for 5minutes
6.Add beans into stew,add about 5tablespoons of water or more depending on how thick or runny you want it to be.allow to simmer gently for about 15mins.Stir,taste and adjust seasoning.
7.Wash,Peel and cut  plaintain  (seasoning with salt is optional)into thin diagonal shapes.
8. Heat remaining oil in a frying pan ,fry plantain pieces in hot oil.Turn  occasionally Until golden brown.remove and drain on a paper towel.
9.Serve beans with plantain pieces,garnish with spring onion
