Trust me when I tell you this sauce right here is the best I've ever had!
This is flavor itself bottled up in a jar.I Used it as a dip for my crispy ripened plantain chips ,added a tad bit to my omelette before frying this morning and it took my omelette to a whole new level..
I plan on using it as a marinade for my Tilapia fish and chicken over the weekend.And ohhh!kelewele(spicy fried plantain bits)on my mind.Definately making another batch next week.
This sauce is my holy grail!
INGREDIENTS;
- 10 petit belle pepper (kpakposhito)
- 2 stumps of fresh ginger neatly washed
- 2 cloves of garlic (peeled and crushed)
- 2 green bell peppers
- Handful of freshly chopped spring onion
- 1 large sized red onion (peeled and chopped)
- 1 teaspoon of dried rosemary
- 1/3 cup of coconut oil
- Shrimp seasoning
- A pinch of salt
PREPARATION;
- Put all vegetables and rosemary in a blender and roughly blend
- Heat up oil until very hot
- Pour blended mixture into hot oil
- Add shrimp seasoning
- Add salt and allow to simmer for about 5 minutes
- Turn off heat and allow to cool
- Bottle in an airtight container and store in the refrigerator
