GHANAIAN STYLE GARDEN EGG STEW (Nyaa-dua)

INGREDIENTS;
•10 whole garden eggs
•5 medium tomatoes
•2 large onions
•3 yellow pepper/10 kpakposhito
•whole salmon
• coconut/sunflower oil.
•salted beef (toolo beef)
•1teaspoon minced ginger
•1/2teaspoon minced garlic
•1 teaspoon of akitchenfaraway spice mix
•salted fish(Koobi)
•seasoning cube
•2 tablespoons tomato purée
•salt to taste.


PREPARATION OF INGREDIENTS 

  1. Cut salted fish(Koobi)into 2,wash and soak in water.
  2. Cut stalk of garden eggs,boil until soft,strain water and st aside,pour cold water on garden eggs.
  3. Remove skin and seeds ,blend seeds and set flesh aside.
  4. Chop 1 bulb of onion,add pepper,ginger,garlic blend and set aside
  5. Chop remaining bulb of onion and tomatoes.
  6. Wash salted beef (toolo beef) and set aside
  7. Remove skin and bones from salmon,wash and break into pieces.
PREPARATION OF STEW 
8.In a cooking pot,heat oil ,fry onions and salted fish(koobi)for about 3mins
9.Remove Koobi and set aside.
10.Add pepper mix ,fry for about 2minutes.
11.add tomato paste,stir continuously for about 2minutes
12.Add chopped fresh  tomatoes ,add about 10mls of water,stir,add salted beef,add a teaspoon of akitchenfaraway all spice mix.Cook on medium heat for about 20-25minutes,stir occasionally.
13Add koobi,salmon and seasoning cube.Cook for about 5-10minutes
14.Add blended garden eggs seeds Cook for about 5-7minutes
15.Add flesh of garden eggs,allow to simmer on low heat for about 5-10 minutes 
16.Taste and adjust seasoning.
17.Serve with boiled plaintain,Yam,cocoyam.
