CHICKEN PEANUT BUTTER SOUP (Nkatie Nkwan)



Making peanut butter soup is a Sunday ritual

INGREDIENTS;
For chicken 
  • 1kg of chicken 
  • 2 medium sized onions
  • 2 cloves of  peeled garlic 
  • 3g of peeled ginger 
  •  6 green chili peppers 
  • fennel seeds
  • 500mls of water 
  • Salt to taste 
For peanut 
  • 300g peanut butter 
  • 3 tablespoons tomato purée
  • 500mls of water
For soup
  • Seasoned chicken in chicken stock
  • Prepared peanut butter 
  • 1 large size tomato 
  • 3 scotch bonnet pepper 
  • I medium size onion 
  • 400 mls of water


PREPARATION ;
Chicken 
  1. Wash chicken thoroughly with warm water and cut into pieces 
  2. Place chicken in soup pot and season with salt 
  3. Blend onions,ginger,garlic,pepper,and fennel seeds 
  4. Pour blended mixture on the chicken soup pot
  5. Add 200mls of water and allow to simmer on medium heat for 15minutes
  6. Allow chicken to sit in juice overnight in the refrigerator or at least 4hours
Peanut 
  1. In a saucepan ,add tomato purée to peanut butter and mix well 
  2. Add water in bits to prevent it from getting lumpy 
  3. Place on medium heat and stir frequently until mixture thickens 
  4. Allow to simmer on low heat until oil begins to settle on surface 
Soup
  1. Bring out chicken in soup pot from refrigerator and allow to simmer on medium heat
  2. Mix prepared peanut butter with water and pour on chicken in soup pot 
  3. Add tomatoes ,pepper,and onion 
  4. Cook on medium heat until vegetables are soft 
  5. Do not cover soup to avoid spillage
  6. Remove vegetables and blend until smooth 
  7. Pass through a strainer into soup
  8. Allow to cook for 20minutes 
  9. Soup is ready when oil begins to surface 
  10. Serve with boiled rice,rice balls or yam
