MASHED SEMI RIPENED PLANTAIN (ETO)

 Eto is a Ghanaian traditional dish made from ripened plantain or yam.It's usually fed to the bride on her wedding day,to the adolescent during puberty rites,to the celebrant of bithdays .
Growing up,birthdays in my house
was meaningless without the grand appearance of eto fully garnished with eggs.This was the only time I had to eat 3 whole egg without having to share with my cousins or friends.
Grandpa is no more,but his recipe of eto still lingers in my mind.making this eto for lunch brought back too many sweet memories.


INGREDIENTS;
  • 4 semi ripened plantain 
  • Handful peeled roasted peanut 
  • 5 scotch bonnet pepper 
  • 1 medium size onion 
  • Charred stinking fish (optional)
  • 2 whole eggs 
  • 1 avocado 
  • 4tablespoon full of palm oil 
  • Salt to taste 



PREPARATION;
  1. Wash,peel and cut plantains into pieces 
  2. Boil plantain and eggs in salted water for 20minutes
  3. Wash and grind onion,pepper with a pinch of salt in an earthen ware bowl (asanka)
  4. Add charred stinky fish and grind
  5. Add some peanuts and grind until a smooth texture is formed
  6. Pour palm oil into mixture and stir well 
  7. Add cooked plantain pieces and mash 
  8. Garnish with peeled hard boiled eggs,remaining peanuts,onion slices and avocado
